2 sticks, 16 Tbsps, salted butter, cold
1 yolk, lightly beaten
1 Tbsp pure vanilla extract
4 cups currants, frozen is fine (and for tips on freezing currants, see the note below)
1 cup granulated sugar
2 Tbsp water
1 Tbsp arrow root
