2 pound skinless chicken thighs or breasts, cut into bite size cubes
3/4 cup soy sauce
1/3 cup canned coconut milk (lite or regular both work great)
juice of 2 limes
1/4 cup rice vinegar
1/4 cup honey
4 cloves garlic, minced or grated
3 bay leaves
2 teaspoons fresh ginger, grated
1/2 teaspoon black peppercorns
coconut rice, for serving
mango, pineapple, or mango strawberry salsa, for serving (optional)
