Serves: 12 Cupcakes, 1 7-Inch Cake

1 cup finely shredded carrot, tightly packed (about 2 large carrots)
½ cup coconut oil
½ cup honey
4 eggs
½ cup cocoa (preferably Dutch cocoa but either way works)
½ cup peanut butter or almond butter (I used peanut butter).
¼ cup coconut flour
2 teaspoons vanilla extract
½ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon gelatin
