1 clove garlic, minced
1/8 tsp. kosher salt
1/8 tsp. black pepper
1 box refrigerated pie crusts, softened as directed on box (e.g. Pillsbury)
1 large zucchini, cut in lengthwise strips using a peeler
1 medium carrot, cut in lengthwise strips using a peeler
1 Japanese eggplant, cut in lengthwise strips using a peeler
1 tbsp. olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
