1 ounce dried porcini mushrooms
3 pounds beef short ribs
Black pepper
2 tablespoons all-purpose flour
1 onion, chopped
1 carrot, peeled and chopped
1 rib celery, chopped
6 cloves garlic, pressed through garlic press
2 tablespoons tomato paste
½ cup red wine
1 cup beef stock
1 (28 ounce) can crushed tomatoes
2 teaspoons Italian seasoning
1 tablespoon chopped parsley
1 (16 ounce) package spaghetti, cooked according to package instructions, and held warm
Parmesan cheese, for garnish
