Yields: ONE 3-LAYER 8 INCH CAKE
Prep time: 20 minutes
Cook time: 45 minutes
Total time: 2 HOURS + 2 HOURS TO CHILL IN THE FRIDGE

Cake:
8 tablespoons (1 stick) butter, softened at room temperature
1/4 cup canola oil
1 cup sugar (use 1 1/2 cups for a sweater cake)
3 eggs, at room temperature
2 teaspoons pure vanilla extract
1 teaspoon instant coffee, optional
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups cake flour (or 2 cups flour + 1/4 cornstarch)
1 cup buttermilk

Pudding:
2 1/2 cups water plus 1/2 cup water, separated
2 1/2 cups granulated sugar
1 tablespoon honey
1 cup unsweetened cocoa powder
a scant 2/3 cup cornstarch
5 1/2 tablespoons unsalted butter, cold and cut into 1-inch cubes
1/2 teaspoon pure vanilla extract

Frosting:
1 (8 tablespoons) stick salted butter, softened to room temperature
1 cup powdered sugar
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1-2 tablespoons heavy whipping cream
