Ingredients

Serves: 4

Total Time: 2 hours 30 mins

Rendang spice paste:
150g x banana shallots
6 x garlic cloves
1-2 x birdseye chillies. (retain seeds in the chilli if you like spicy heat!)
Thumb sized piece of ginger
3 x lemongrass stalks
1-2 tablespoons of water
For the main dish:
1kg of stewing beef steak
5-6 x tablespoons of groundnut oil
1 x lemongrass stalk
4 x green cardamom pods
4 x cloves
2 x star anise pods
6 x tablespoons of toasted dessicated coconut
2 cinnamon sticks
1 x 400ml can of coconut milk
6 x kaffir lime leaves
1 x tablespoon of dark soy sauce
1 x tablespoon of nam pla (fish sauce)
275ml beef stock (fresh if available)
The juice of 1 lime
25g toasted peanuts
Salt & pepper to season.
