These perfectly puffed popovers with smokey cheese and herby thyme are simply the best ever!

1 c milk, room temperature
2 eggs, room temperature
1 c all-purpose flour
1/4 t kosher salt
1 T unsalted butter, melted
1/2 c shredded smoked Gruyere cheese (this can be found in the gourmet cheese section at the grocery store)

cooking spray
flour for dusting the pan
