Ingredients

Large 4lb organic chicken, washed and dried (I used salt and lime)
Zest of 3 lemons
Juice of 1 lemon
1tbsp of olive oil
3 Large sprigs of rosemary, chopped
1/2 Cup of dairy free butter, melted (see post for my recipe)
5 Cloves of garlic, minced
Cavity stuffing (1-2 lemon(s), 6 garlic cloves, 1 large onion, chopped, 2 rosemary sprigs)
seasoning:
1tbsp + 1 tsp of himalayan pink salt
1tbsp + 1 tsp of black pepper
