1/2 cup rum or orange juice
5 tsp yeast
11/4 cup warm water, divided
3/4 cup + 1 tsp sugar
1/4 cup dry milk powder
7-9 cups white bread flour
3 eggs, beaten
1/2 cup (1 stick) soft butter
1 tsp salt
extra flour for dusting
olive oil for oiling
an extra egg, beaten with a pinch of salt, for brushing
Demerara or raw sugar for sprinkling (about 1-2 Tb per loaf)
