Ingredients
FOR THE VEGETABLES:
1 Acorn Squash, cut into wedges
2 C of Broccoli and Cauliflower
1 bunch of Radishes
2 large Beets, peeled and cut into large cubes (you can also use canned whole beets here)
1 handful of fresh Spinach
1 Onion, peeled and sliced into wedges
2 C fresh Brussel Sprouts, trimmed and halved
2 Tbl Oil
Salt and Pepper, to taste
FOR THE CRANBERRY HORSERADISH CREAM:
6 oz. fresh (or frozen) Cranberries, reserve about ¼ C of these aside
½ C Sugar
1 Tbl Water
¼ C + 2 Tbl vegan Sour Cream (we use Tofutti brand)
1-2 tsp of Horseradish
