125g (3/4 cup) cold butter, cubed
250g (2 cups) flour
2 tablespoons sugar
2 egg yolks
4-5 tablespoons ice water

For the salted caramel:
250g sugar
50ml water
100g butter
100ml cream
2 tablespoons sea salt flakes

For the chocolate ganache:
200g dark chocolate
100ml cream
