3 3/4 cups water
1 head butter lettuce
4 slices Canadian bacon or ham
1 cup fresh or frozen edamame (out of the pod)
1 large carrot, julienned or finely sliced
3 scallions, green and white parts sliced
Handful of fresh cilantro, larger stems removed, to serve
Roasted peanuts, chopped, to serve
1 lime
2 tablespoons soy sauce
1 tsp brown sugar
1 tsp fish sauce
1 clove garlic, minced
2 tablespoons peanut oil
1 Tbs peanut butter, smooth or crunchy
2 tsp fresh ginger, grated or minced
1 clove garlic, minced
2 Tbs soy sauce
1 Tbs rice vingar
1 tsp honey
