6 ounces bittersweet chocolate, chopped
6 large eggs, separated, at room temperature
1 cup sugar, divided
3 tablespoons instant espresso powder, such as Medaglia d'Oro
1/4 teaspoon coarse salt
1 teaspoon pure vanilla extract
whipped heavy cream, for serving

Very salty caramel sauce:
1/2 cup butter
1 cup brown sugar
3/4 teaspoon Fleur de Sel
1 teaspoon vanilla extract
1/2 cup heavy cream
