Ingredients

1tbsp oil
2tbsp butter or margarine, divided
1 onion, halved then thinly sliced
3 cloves garlic, minced
1 carrot, cut into fairly small dice
300g mushrooms, cut into chunks
250ml red wine (Burgundy is traditional, but I used Merlot and it still tasted great!)
½ tsp dried thyme
Black pepper
500ml vegetable stock
1tbsp plain flour
Fresh parsley, for serving
