This is a sugar-free adaptation of Sharon A. Longaker’s blue ribbon winning carrot cake recipe, originally printed in the "Favorite Recipes of America: Desserts”, 1969. A delicious classic!

1 cup chopped walnuts
1 tsp. nutmeg
1 tsp. ground cloves
1 tsp. cinnamon
½ tsp. baking soda
1½ tsp. baking powder
2 ½ cups flour
5 TBSP hot water
1 ½ cups grated raw carrot
4 egg whites
4 egg yolks
¾ cup Truvia Baking Blend
1 ½ cups vegetable oil
