Ingredients
2 cups eggplant puree – see preparation above, you’ll need two eggplants, two tablespoons lemon juice and a tablespoon of olive oil
1 cup oat bran flour
1 cup blackberries
1/2 cup flaxseed meal
1/2 cup egg whites
1/2 cup xylitol – if you’re not on the THM plan, you can substitute this with sugar or the sweetener of your choice
1/2 tablespoon cinnamon
2 teaspoons vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
