Dark Chocolate Cakes:
4 cups flour
1-1/3 cups cocoa
2-1/2 teaspoons baking soda
1 tablespoon salt
1 cup butter
2 cups brown sugar
2 eggs
2 tablespoons coffee, prepared
2 teaspoons vanilla
2 cups buttermilk

Mint Chocolate Chip Cream:
1 cup butter, softened
4 cups powdered sugar
1 teaspoon vanilla
3/4 teaspoon peppermint extract
1/4 cup milk
1 tablespoon fresh mint, minced
1-1/2 cups mini chocolate chips
1-2 drops green food coloring, optional

Chocolate Ganache:
2 cups chocolate chips
3/4 cup whipping cream
