Have you ever wanted to make cupcakes, but didn't want the burden of 2 dozen cupcakes lying around? Then this recipe is what you've been searching for! Totally sweet and decadent, and perfectly portioned to make just two cupcakes.
Ingredients
For the cupcakes:
3 tbsp all-purpose flour
3 tbsp white granulated sugar
1 1/2 tbsp butter, softened
1 tbsp + 1 tsp cocoa powder
1 egg white
1 1/2 tbsp milk
1/4 tsp vanilla extract
1/8 tsp baking soda
1/4 tsp baking powder
pinch of salt
Yields: 2-3 cupcakes
For the cream cheese frosting:
2 oz cream cheese
1 tbsp butter, softened
2 cups powdered sugar {more or less depending on how stiff you would like the frosting}
1-2 fresh strawberries, mashed
chocolate-dipped strawberries, for garnish
