Ingredients

2 tablespoons olive oil
1 medium onion
4 – 5 cloves garlic, minced
4 – 5 medium/large red potatoes, chopped
1 large sweet potato, chopped
1/2 cup white or blush wine
1/2 cup water
1 container of silken tofu
1 15 oz can chickpeas, rinsed and drained
1/2 cup pine nuts
1/2 cup nutritional yeast flakes
2 – 3 teaspoons garlic powder
2 teaspoons dried basil
2 teaspoons dried oregano
1/2 container (approximately 1/2 cup) vegan cream cheese
1/2 cup Vegan Butter…aka Earth Balance
1 – 2 teaspoons sea salt
Shredded vegan cheddar cheese (optional)
