1 tablespoon olive oil
1 pound boneless skinless chicken breast halves, cut into bite sized pieces
4 plum or Roma tomatoes
3 garlic cloves
1 1/4 cups chicken broth
1 15 ounce can chickpeas, drained
3/4 teaspoon ground cumin
1/2 teaspoon curry powder
1 cup couscous, uncooked
1 cup frozen green peas (thawed in microwave for a minute)
1/4 cup freshly squeezed lemon juice
1/2 teaspoon salt
