Yield: 3-4 dozen cookies
2 sticks unsalted butter, room temperature
1 cup white sugar
½ cup brown sugar
2 large eggs
1 teaspoon peppermint extract
3½ cups unbleached all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
36-48 chocolate pieces of your favorite bar (there are 12 segments in a Hershey’s bar, so if using that, 3-4 bars)
