1 1/2 cups finely crushed gingersnap cookies
2 tablespoons granulated sugar
1/4 cup butter, melted
5 8 ounces packages cream cheese, softened
1 1/3 cups packed brown sugar
3 tablespoons all purpose flour
5 eggs
2 egg yolks
2 teaspoons vanilla
1 recipe Caramel Topping (see recipe below)
2 1.4 ounce bars chocolate-covered English toffee, coarsely chopped
