Ingredients
For Cupcakes:
1 Box White Cake Mix (I used Betty Crocker)
3 Eggs
1/3 Cup Oil
1 1/4 Cup Milk
2 TSP Vanilla
1 1/2 Cups Fresh Blackberries
For Blackberry Buttercream:
1 Cup Butter (softened)
2 TBSP Blackberry Puree (see note)
3-4 Cups Powdered Sugar
Fresh Blackberries (for garnish)
For White Chocolate Ganache:
1 Cup White Chocolate Chips
3 TBSP Whipping Cream
Note:
To make blackberry puree, put fresh berries in blender or food processor and blend until liquid. Run through strainer to remove seeds.
