Freezing tip: To make the sauce ahead, carry out steps 2 and 3. Set aside to cool slightly. Place in an airtight container in fridge to cool completely. Label, date and freeze for up to 3 months. Thaw overnight in fridge. Reheat in a saucepan over medium heat.

250ml (1 cup) chicken stock
80ml (1/3 cup) red wine
80g (1/2 cup) frozen peas, just thawed
40g (1/2 cup) finely grated parmesan
