Ingredients
Yield: makes approx. 36 small lamingtons
Cake:
1/2 cup (125g) butter
¾ cup (170g) caster sugar
1 teaspoon vanilla
2 eggs
2 cups (670g) Self Raising flour
½ (125ml) cup of milk
Icing:
1lb (500g) icing sugar
4 tablespoon cocoa
½ cup (125ml) boiling water
1 tablespoon butter
1 teaspoon vanilla
2 cups (160g) desiccated coconut
