Ingredients
Cupcake:
1 1/2 cups blanched almond flour
1 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamom
3 eggs
1/4 cup maple syrup
2 tablespoons almond oil or grapeseed oil
1 1/2 cups carrots, finely chopped (The food processor is the easiest way to do this.)
1/2 cup pureed dates (If you buy dried dates and they are too hard to puree in your food processor, microwave them with a little bit of water to soften them. Strain out any excess water and then puree them.)
1 cup coarsely chopped pecans
Frosting:
1/2 cup coconut oil
1/4 cup + 2 tablespoons maple syrup
