1/2 cup canned coconut milk (I found one that was 50 calories for 1/2 cup)
1 tbsp tomato paste
1/2 tbsp red curry paste (mine was a package this time)
1 tbsp rice wine vinegar
1/2 tbsp lime juice
1/2 tbsp lemongrass paste or fresh chopped
1/2 tbsp chopped basil leaves
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground coriander
1/4 tsp ground ginger (I used fresh this time)
1/8 tsp ground cumin
1/8 tsp chili powder
Chipolte chili powder or cayenne pepper to taste
1/2 medium red pepper, chopped
