I’m a massive fan of stuffed breads. Not only do they make an impressive centrepiece for any gathering, but they are a ready packaged sandwich just waiting to be teared into – no messy pots of sandwich fillers or spreads required. This variation has a satisfying meatball centre – just make sure that the dough has a tight seal around the filling to keep the moisture of the tomato sauce inside.

Ingredients

Meatballs:
1 tbsp olive oil
1 onion (diced)
250g mince (pork or beef)
2 cloves of garlic (chopped)
60g hard cheese (such as Parmesan)
60g breadcrumbs
1 egg

Sauce:
1 tbsp olive oil
1 onion (diced)
1 garlic cloves
½ tsp salt
½ tsp sugar
1 x 400g tin of chopped tomatoes

Bread:
250g strong white bread flour
1 tsp salt
1 ½ tsp fast-action yeast
150ml lukewarm water
40g softened butter
1 egg
