Cut brinjal, chop onions and tomatoes. Slit green chillies. Dry roast peanuts and sesame seeds and make coarse powder of it. Fry onions and tomatoes, add all the condiments and brinjals. Once brinjal cooked add peanuts and sesame seeds powder.


Brinjal/Baingan/Vankaya - 5 medium sized
Onion - 1 medium
Tomato - 1 medium
Green Chilli - 1
Curry Leaves - 5 to 7
Oil - 1 tbsp
Mustard Seeds -1 tsp
Cumin Seeds - 1 tsp
Red Chilli -1
Salt - to taste
Turmeric Powder - 1 tsp
Red Chilli Powder - 1/2 tbsp
Coriander Powder - 1/2 tbsp
Peanut Sesame Seed Powder - 2 tbsp
