Serves: 4 to 6

6 cups cooked brown rice, cooked according to package directions
1 pound organic chicken sausage links, cut into bite sized pieces
1 large red bell pepper, chopped
½ onion, diced
2 large carrots, cut in rounds
1 TBSP garlic, minced
salt and pepper to taste
5 to 6 cups chopped kale
1/3 cup chicken stock
3 to 4 TBSP olive oil
